chicken and rice patty

last week we made some chicken and rice patties here's the recipe

1 chicken breast
2 cups of jasmine rice
1/2 tablespoon olive oil
1/2 a large carrot
1 spring onion
1 cup mozzarella
2 eggs

and the method we used was


  1. preheat over to 200 degrees Celsius
  2. slice chicken breast in half width ways so it will cook through quicker
  3. heat oil in medium frying pan and cook chicken breast until it begins to brown
  4. remove from pan and shred chicken using a fork and set aside
  5. grate carrot until you have at least one cup
  6. finely slice spring onion
  7. lightly beat the eggs
  8. in a large bowl add rice eggs chicken spring onions and carrot and 3/4 of the cheese and mix
  9. spray muffin trays with cooking spray and spoon mix into tray before compressing and adding the remaining cheese
  10. place in oven for 15 minutes or until golden brown
  11. let them sit in the tray for a few minutes before removing them you can use a knife to help get them out this recipe makes 12 patties

there was a change that we had where the chicken was already poached and so all we had to do was shred it but that was a bit hard to do also we decided that we should've had some spices in it as well because otherwise it's a bit bland
